It may be rainy and dark outside today but inside the Lock Farm’s greenhouse there is a bit of sunshine.
While things seem to be bad all around the good news at the Lock Farm is that our crops are growing on schedule. It is our hope that all these will grow well and that we will have lots of fresh vegetables to serve the needs of our customers and the community.
1 pound cooked, drained and cooled pasta
16 ounces Italian style dressing or your favorite salad dressing
2 medium tomatoes, chopped
1 green bell pepper, chopped
½ onion, chopped
1 cucumber peeled and chopped
1 4-oz can of black olives
½ cup grated Parmesan cheese
In a large bowl place tomatoes, pepper
onion, olives and cheese.
Add cooled pasta.
Pour salad dressing over top.
Toss to coat vegetables.
Chill before serving
It will not be long now before you can enjoy some Lock Farm cucumbers.
